Ingredients
- 4 medium white or sweet potatoes, cut as desired*
- 1 cup reduced fat cheddar cheese
- 1 ½ raw chicken breast
- ¼ cup sriracha sauce (more or less as desired)**
- Chives, optional
Cooking Instructions
- Preheat oven to 425 degrees
- Coat oven safe pan with non stick spray
- Add potato slices/fries to pan
- Bake for ~20 minutes
- While potatoes are baking, boil chicken until cooked thorugh
- Shred cooked chicken
- Toss chicken with sriracha sauce
- Remove fries from oven
- Top with shredded chicken and cheese
- Place back in about about 6-7 minutes
- Remove and top with chives, if desired
Notes:
*can sub with a frozen French fry, but please be aware of nutrition content as these contain higher fat
**bbq sauce would also work well here
